Rosemary Almond Chicken

I had to share this even though the pictures for this creation aren't very appealing. I was unsure of what to cook for dinner last night but knew I was going to use chicken and new that I wanted to try something different and here is what I came up with: Rosemary Almond Chicken!

I took some chicken strips and made them a little thinner by pounding them with a meat cleaver. Then I crushed up some roasted almonds, added some rosemary and pepper and mixed them together. I dipped each piece of chicken into milk (to help the mixture stick) and then into the almond mixture. I then placed the chicken into a glass dish and poured the extra mixture over the top of the chicken. Grated some Parmesan cheese on top of the chicken and baked in the oven at 375 degrees for about 25 - 30 minutes (covered with foil in the beginning and then took the foil off about 20 minutes into baking).

Served it up with a small baked potato and some broccoli and mmm mmm!
